Ingredients
200 gr of beef, diced about 3 cm x 3 cm

4 pieces of tofu, cut into triangles
Chopped scallions
5 pieces of red bird’s eye chili
1 bay leaf
2 lime leaves
1 segment of galangal, crushed
3 tbsp sweet soy sauce
400 ml water
1 tbsp grated palm sugar
1 segment of cinnamon
1 tbsp tamarind water
Enough oil for sautéing
Ground spices
6 shallots
4 cloves of garlic
1 segment of ginger
1 tsp coriander powder
1/2 tsp pepper powder
1 candlenut
5 curly red chilies
1/4 nutmeg
2 tsp salt
1/2 tsp mushroom broth
How to Make
1. Wash the beef and dice it into pieces about 3 cm x 3 cm or according to preference. Set aside.
2. Pour hot water over the tofu, soak for about 5 minutes, then rinse.
3. Cut the tofu into triangles and fry until browned.
4. Ground the spices. Then sauté until fragrant.
5. Add bay leaf, lime leaves, cinnamon, and galangal.
6. Add the beef, stir until the spices are evenly mixed and sauté until the meat is slightly cooked.
7. Add tofu, stir until the spices are evenly distributed, then add water and tamarind water. Cook until boiling.
8. Add palm sugar and sweet soy sauce. Cook again until the water slightly reduces or according to how much water is desired.
9. When almost cooked, taste and add red bird’s eye chili and scallions.
10. And… Beef stew is ready to be served.
